Norwegian Seafood Council has confirmed that Chef Rungthiwa Chummongkhon – or Chef Fae as she is known will be starring at Seafood under the Stars 2020 with some of her New Nordic creations. Chef Fae was born and raised in Chiang Rai in Northern Thailand and she is now head chef of Front Room, a Thai – inspired Nordic restaurant at Waldorf Astoria Bangkok. She admits that she thinks of food 24/7. Her culinary interest began at a young age while helping her parents in the kitchen. She credits them for teaching her how to pick the best local products available and how every ingredient must be purposeful. Pure, fresh, local and making the most of the season are Chef Fae’s principles in the kitchen.

Also, Chef Fae spent the last 12 years of her career in Denmark and other countries in Europe. Whilst training she worked under Michelin Chef Wassim Hallal at Frederikshøj and graduated from a three-star restaurant, La Belle Époque in Germany. Her experience in Europe includes several Michelin-starred restaurants, including her last post as Executive Chef at Kokkedal Slot Copenhagen. Chef Fae’s culinary style is a combination of “New Nordic” and Thai. Her food is a combination of opposites: new and traditional, western and Far East. She uses Thai cooking techniques in traditional Scandinavian cuisine – and vice versa – to create original visual and contextual flavours and impressions that are at once innovative and yet familiar to diners.
