On Friday, 25 September 2026, Rossini’s at Sheraton Grande Sukhumvit, a Luxury Collection Hotel, Bangkok, invites guests to experience Sicily as a living story: an island shaped by volcanic earth, encircled by the Mediterranean and sustained by generations who have cooked with fire, instinct and an enduring respect for the land.

Rather than a conventional wine-pairing dinner, the evening unfolds as a journey across the island, each course drawn from a different landscape: the salt-kissed coastline, sun-ripened produce, wood-fired tradition and wines born of Sicily’s distinctive terroirs.

A First Glimpse of the Island

The journey opens with a trio of aperitivo bites: golden Arancino Siciliano, a delicate Cannolo filled with Gambero Rosso tartare, and Crostino layered with ricotta and anchovy. Served with Pietradolce, these opening tastes capture Sicily at its most vibrant, generous and full of contrast.

From the Coast

The evening then turns to the sea with Capesanta Siciliana: pan-seared Hokkaido scallop with cauliflower cream, Sicilian pistachio, orange zest and extra virgin olive oil. It is followed by Melanzana alla Norma Moderna, a contemporary reading of one of Sicily’s most beloved dishes, uniting charcoal-roasted eggplant, whipped salted ricotta, Piennolo tomato fondue, basil purée and crisp eggplant. Both courses are paired with wines from Feudo Maccari, chosen for their warmth, richness and aromatic character.

At the heart of the menu is Risotto ai Ricci di Mare, a creamy Carnaroli risotto enriched with Sicilian sea urchin, lifted by Amalfi lemon and finished with parsley oil and bottarga. More than a seafood course, it is a portrait of the Mediterranean shore: saline, luminous and intensely evocative.

From Sea to Flame

Agnello Siciliano alla Brace celebrates the island’s rustic soul through wood-fired lamb with caponata, a delicate potato millefoglie, fresh mint and a deeply flavoured Nero d’Avola jus. Bold yet refined, it reflects a cuisine that has always found elegance in honest ingredients and elemental cooking.

A Sweet Finale

The final chapter is Cassata Siciliana, reimagined with ricotta mousse, pistachio sponge, candied citrus, almond and dark chocolate, and paired once more with Pietradolce. The evening closes with a selection of Sicilian-inspired petit fours.

This is not simply an exercise in matching food with wine. It is an invitation to travel: to encounter Sicily through its volcanic landscape, coastal abundance, ancient culinary traditions and the winemakers who continue to translate the island into every bottle.

Because at Rossini’s, wine is not served beside the story. Wine is part of the story.
