Savour the Ocean-Fresh Flavour of Fjord Trout at Goji Kitchen + BarGoji Kitchen + Bar, the international culinary marketplace at Bangkok Marriott Marquis Queen’s Park, is inviting guests to discover the ocean-fresh flavour of fjord trout, sourced straight from the cold clear waters of Norway’s fjords and expertly prepared by guest chef Christian André Pettersen, Norway’s representative in the Bocuse d’Or Europe gastronomy competition.

From 14-17 July 2022, Chef Christian André Pettersen will be presenting three stunning signature dishes at an exclusive live station, as part of Goji Kitchen + Bar’s Thursday-Sunday dinners, Saturday lunches and Sunday brunches. Diners can choose from “Norwegian Sea Trout Aurora Borealis” (lightly smoked & baked sea trout with poached asparagus, sprouts, ramsons and brown butter sabayon), “East Meets West” (Norwegian sea trout ceviche with lightly pickled cucumber, melon & seaweed salad and green tomato & apple jus flavoured with yuzu), and “Heritage of Lofoten” (Norwegian juniper smoked sea trout with butter-poached potato, sprouts, sour cream sauce with caviar & chives, and crispy Nordic rye chips).

The fresh flavours of fjord trout or “The Jewel of the Norwegian fjords” will continue to be available until the end of 31st July 2022, with a series of delectable dishes as part of Goji Kitchen + Bar’s regular buffets. Guests can choose from delights such as whole salt-baked fjord trout and fjord trout Wellington, a series of filleted fish dishes including oven-baked fjord trout fillet with lemon butter sauce, baked dishes such as smoked fjord trout pie, fjord trout gratin and smoked fjord trout thin crust pizza, plus a selection of sumptuous soups and stews, including smoked fjord trout chowder, seafood soup with fjord trout, and fjord trout stew with carrots & potatoes.

Goji Kitchen + Bar’s expert Asian chefs will also craft a selection of fresh fjord trout sushi, sashimi, nigiri and maki rolls, as well as light and fragrant fjord trout & mango salad, grilled trout cheek with seafood sauce, crispy fjord trout skin salad with Chinese celery, and tandoori fjord trout. Finally, a wide range of classic Scandinavian cold dishes includes dill-smoked fjord trout, fjord trout gravlax and beetroot fjord trout, plus house sugarcane smoked fjord trout with a selection of sauce, and open-faced fjord trout sandwiches, Crudo, crostini and more.

Chef Christian’s live station and three signature dishes will be available at Goji Kitchen + Bar from 14-17 July 2022 as part of the following international buffets:

  • Monday – Thursday Dinner | 17.30 – 22.00 hrs | Baht 1,698 ++ per person
  • Friday – Sunday Dinner | 17.30 – 22.00 hrs | Baht 2,199 ++ per person
  • Saturday Lunch | 12.00 – 14.30 hrs | Baht 2,199 ++ per person
  • Sunday Brunch | 12.00 – 14.30 hrs | Baht 2,500 ++ per person

The fjord trout promotion will then continue until 31st July 2022, as part of every weekday and weekend buffet lunch, dinner and brunch at Goji Kitchen + Bar. This special event is a collaboration among the Norwegian Seafood Council (NSC) one of our premium members, and, another corporate member of the Thai-Norwegian Chamber of Commerce, Thammachart Seafood, and Goji Kitchen + Bar at Bangkok Marriott Marquis Queen’s Park. The imported Norwegian fjord trout has gone through stringent quality inspection by Thammachart Seafood to ensure the highest quality standard is met and can be identified through the Seafood from Norway origin mark.
